Deliciously crispy zucchini fritters that are easy to make and perfect as an appetizer or snack.

- 2 medium zucchinis, grated
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 cup grated parmesan cheese
- 1/4 cup chopped green onions
- 1 clove garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- Olive oil for frying
Instructions
- Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10 minutes to draw out excess moisture.
- In a large bowl, combine the drained zucchini with flour, eggs, parmesan cheese, green onions, garlic, and black pepper. Mix until well combined.
- Heat olive oil in a skillet over medium heat. Drop spoonfuls of the zucchini mixture into the skillet and flatten slightly. Fry for 3-4 minutes on each side until golden brown.
- Remove cooked fritters from the skillet and place on paper towels to drain excess oil.
Notes
Serve warm with sour cream or a tangy dipping sauce. Can be stored in the refrigerator for up to 3 days.
