Description

Deliciously crispy zucchini fritters that are easy to make and perfect as an appetizer or snack.


Ingredients

  • 2 medium zucchinis, grated
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1/2 cup grated parmesan cheese
  • 1/4 cup chopped green onions
  • 1 clove garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Olive oil for frying

Instructions

  1. Place the grated zucchini in a colander, sprinkle with salt, and let it sit for about 10 minutes to draw out excess moisture.
  2. In a large bowl, combine the drained zucchini with flour, eggs, parmesan cheese, green onions, garlic, and black pepper. Mix until well combined.
  3. Heat olive oil in a skillet over medium heat. Drop spoonfuls of the zucchini mixture into the skillet and flatten slightly. Fry for 3-4 minutes on each side until golden brown.
  4. Remove cooked fritters from the skillet and place on paper towels to drain excess oil.

Notes

Serve warm with sour cream or a tangy dipping sauce. Can be stored in the refrigerator for up to 3 days.
