- 1 cup almond milk (or any milk of choice)
- 2 tablespoons maple syrup (or honey)
- 1 teaspoon vanilla extract
- 1 cup pomegranate seeds
- 1/2 cup granola
- Fresh mint for garnish (optional)
Instructions
- In a bowl, mix chia seeds, almond milk, maple syrup, and vanilla extract. Stir well and let it sit for about 5-10 minutes, then stir again to prevent clumping.
- Refrigerate the mixture for at least 2 hours or overnight until it thickens.
- Once the chia pudding is set, layer it with pomegranate seeds and granola in a glass or bowl.
- Repeat the layers until the glass is full. Top with additional pomegranate seeds and mint if desired. Serve immediately and enjoy your parfait!
