- 1 pound shrimp, peeled and deveined
- 1 ripe mango, diced
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 red onion, finely chopped
- 1 lime, juiced

- Fresh cilantro, for garnish
Instructions
- In a large bowl, combine the shrimp, diced mango, avocado, halved cherry tomatoes, and finely chopped red onion.
- In a small bowl, whisk together the lime juice, olive oil, salt, and pepper.
- Pour the dressing over the shrimp mixture and toss gently to combine without mashing the avocado.
- Garnish with fresh cilantro and serve immediately.
Notes
Serve fresh, best with tortilla chips or on a bed of greens. Store leftovers in an airtight container in the refrigerator and consume within 24 hours.
