Description
A creamy, sweet, and aromatic Mexican drink made with rice, cinnamon, and vanilla, perfect for warm days.
Ingredients

- 1 cup of rice
- 4 cups of water
- 1 cup of milk (or almond milk for a dairy-free version)
- 1/2 cup of sugar
- 1 teaspoon of vanilla extract
- 1 teaspoon of cinnamon
- Ice
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a blender, combine the rinsed rice and 4 cups of water. Blend on high speed for about 1-2 minutes until well-combined.
- Let the mixture sit for about 3-4 hours, or preferably overnight to soak.
- Strain the mixture through a cheesecloth or fine mesh sieve into a bowl, discarding the solids. Add milk, sugar, vanilla extract, and cinnamon to the strained rice water, and stir until dissolved. Serve over ice.
Notes
Store leftover horchata in a sealed container in the refrigerator for 3-5 days. Shake or stir before serving if it separates.
