Description

A creamy, sweet, and aromatic Mexican drink made with rice, cinnamon, and vanilla, perfect for warm days.


Ingredients

Scale
  • 1 cup of rice
  • 4 cups of water
  • 1 cup of milk (or almond milk for a dairy-free version)
  • 1/2 cup of sugar
  • 1 teaspoon of vanilla extract
  • 1 teaspoon of cinnamon
  • Ice

Instructions

  1. Rinse the rice under cold water until the water runs clear.
  2. In a blender, combine the rinsed rice and 4 cups of water. Blend on high speed for about 1-2 minutes until well-combined.
  3. Let the mixture sit for about 3-4 hours, or preferably overnight to soak.
  4. Strain the mixture through a cheesecloth or fine mesh sieve into a bowl, discarding the solids. Add milk, sugar, vanilla extract, and cinnamon to the strained rice water, and stir until dissolved. Serve over ice.

Notes

Store leftover horchata in a sealed container in the refrigerator for 3-5 days. Shake or stir before serving if it separates.
