- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup heavy cream
- 1 cup chicken broth
- 1 cup sun-dried tomatoes, chopped
- 1 cup fresh spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for garnish
Instructions
- Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Cook the chicken until browned and cooked through, approximately 6-7 minutes per side. Remove the chicken from the skillet and set it aside.
- In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
- Pour chicken broth into the skillet and bring it to a simmer. Stir in heavy cream, sun-dried tomatoes, and Italian seasoning.
- Add fresh spinach to the skillet and cook until it wilts, which should take about 2-3 minutes.
- Return the chicken to the skillet, ensuring it is coated with the creamy sauce. Let it simmer for an additional 5 minutes.
- Serve the Creamy Tuscan Chicken hot, garnished with freshly grated Parmesan cheese.
Notes
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat on the stove over low heat, adding a splash of chicken broth or cream if needed.
