Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 cup sun-dried tomatoes, chopped
  • 1 cup fresh spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts with salt and pepper. Cook the chicken until browned and cooked through, approximately 6-7 minutes per side. Remove the chicken from the skillet and set it aside.
  2. In the same skillet, add minced garlic and sauté for about 1 minute until fragrant.
  3. Pour chicken broth into the skillet and bring it to a simmer. Stir in heavy cream, sun-dried tomatoes, and Italian seasoning.
  4. Add fresh spinach to the skillet and cook until it wilts, which should take about 2-3 minutes.
  5. Return the chicken to the skillet, ensuring it is coated with the creamy sauce. Let it simmer for an additional 5 minutes.
  6. Serve the Creamy Tuscan Chicken hot, garnished with freshly grated Parmesan cheese.

Notes
